Your Ghost Pepper Recipe Guide
Despite the growing popularity Ghost peppers or Bhut Jolokia peppers in the United States, these extremely hot chili peppers still remain a rare commodity. These peppers are often sold in dried form, because freshly-picked ghost peppers are not readily available in the market and are therefore much harder to obtain. 1. Ghost Pepper Burgers
Mix a whole pound of lean ground beef in a bowl with ¼ cup of finely chopped of onion and half a piece of dried ghost pepper. Add 1 clove of minced garlic, 1 tablespoon of fresh parsley, and ½ teaspoon of ground black pepper. Shape mixture into 4 burgers and grill over medium heat for 5 minutes on each side, turning them once only. Put dried peppers into a bowl of water and let it rest in the fridge overnight. Using a blender or food processor, puree the re-hydrated ghost pepper with tomatoes, garlic, salt, water, and mint. Chill then serve with nachos or chips.
3. Ghost Pepper Oil
Preheat oven to 225°F. Cut a whole piece of dried ghost pepper in half. Put it in a baking dish and add ¾ cups of extra virgin olive oil, 2 and ¼ cups of canola oil and a dash of salt. Using aluminum foil, cover the dish and bake for approximately 3 hours. After baking, remove the dish and transfer the contents to an airtight container. Let it cool to room temperature then store in the fridge for a whole month. Use Ghost Pepper Oil for cooking or garnishing.
4. Ghost Pepper Hot Sauce
Mince a batch of dried ghost peppers together with 1 clove of garlic, 1 red bell pepper, and fresh carrots. Combine mixture with a teaspoon of sugar, vinegar, and pepper in a sauce pan and simmer until it starts to thicken. Transfer to a food processor or blender and puree until smooth. Store the mixture in an airtight jar in the fridge. Enjoy your super spicy ghost pepper hot sauce on pizzas, burgers, steaks, hotdogs and other grilled items.
